Masala Dosa Recipe: Crispy South Indian Delight at Home

Instructions
Step 1: Prepare Batter
Soak rice and dal for 6–8 hours. Grind into a smooth batter and ferment overnight.
Step 2: Make Filling
Heat oil, add mustard seeds, curry leaves, onions, and chilies. Add mashed potatoes, turmeric, and salt. Mix well.
Step 3: Cook Dosa
Heat a pan, spread batter thinly, drizzle oil, and cook until crispy.
Step 4: Assemble
Place potato filling inside dosa, fold, and serve hot.
